Mini Egg white bites: breakfast on the go

This simple recipe is designed to give you a nutritious breakfast on the go. They cost under $20 dollars to make and only take about 15 minutes to make.

If you’re like most college kids then breakfast is the last thing you have time for while rushing around in the morning before class.  This simple recipe is designed to give you a nutritious breakfast on the go. They cost under $20 dollars to make and only take about 15 minutes to make. The best part is they will last you a couple days and they’re delicious.

Let’s get started!

What you will need:

  1. Mini muffin tins
  2. A carton of egg whites
  3. A bundle of spinach
  4. A red bell pepper
  5. A bag of shredded cheese
  6. Olive oil cooking spray
  7. Any other vegetables you want to add

Instructions:

 

  1. First, you want to set the oven to 350 degrees.
  2. Wash the vegetables.
  3. Cut the bell pepper into tiny cubes.
  4. Spray each muffin tin with the olive oil spray to prevent sticking.
  5. Peel off little pieces of spinach and sprinkle about 3-4 pieces in each tin.
  6. Sprinkle peppers into each tin.
  7. Add about 3-5 shavings of cheese, depending how cheesy you want them to be.
  8. Pour the egg whites into each tin. If you are using mini muffin tins like I did, I had just enough egg whites to fill each tin and I only had to purchase a small carton. If you are making larger bites using normal size muffin tins, you will need a larger carton of egg whites.
  9. Place the tray in the over and bake for about 12 minutes. This was the perfect amount of time for my mini muffin tins. However, if you chose to use larger tins you will need to bake them for around 20 minutes.
  10. 10.  Place them in the fridge for the next couple mornings before school and enjoy! If you want to spice up your morning add some salsa or hot sauce to them. They taste amazing either way.
